    This is a recipe that is obviously adapted from the one tht is on the back of the Kraft Peanut Butter jars. The good thing for low-carbers is that this recipe doesn't make a big batch, so you're not tempted to overindulge.


    List of Ingredients


    • 1 cup crunchy or smooth 100% peanuts peanut butter (look for a brand where peanuts are the only ingredient)
    • 1 cup Splenda granulated sugar
    • 1 egg
    • 1 tspn vanilla extrract (optional)


    Instructions


    1. Preheat the oven to 350 degrees F. , remove from the oven, and sprinkle the cookies with some of the remaining sugar replacement. Cool slightly before removing from pan.

    2. Grease a large baking sheet.

    3. In a mixing bowl, combine the peanut butter, 1 cup sugar replacement, the egg, and vanilla, and stir well with a spoon.
    4. Roll the dough into balls the size of walnuts.
    5. Place the balls on the prepared baking sheet.
    6. With a fork, dipped in sugar replacement to prevent sticking, press a crisscross design on each cookie.
    7. Bake for 10-12 minutes. Watch carefully, don't overcook.
