Boursin chicken

List of Ingredients
4 chicken breasts, sliced up
Mushrooms, sliced –about 2 cups
Butter
¼ pint sherry
¼ pint chicken stock
¼ pint half and half
1 large Boursin (or Rondelle) cheese
Recipe
Sautee the mushrooms and then put them into a casserole dish. Then sautee the chicken strips in butter and oil. Remove from pan and add to the mushrooms. Add the stock to the sautéing pan, bring to the boil, add the half and half, then the sherry, then add the cheese and smash it. Simmer the sauce for a couple of minutes until everything is smooth, then pour on top of the chicken and mushrooms and put the casserole in the oven for 30 minutes.
