Chicken Piccata

List of Ingredients
4 chicken breast halves, boneless, skinless and flattened to 1/4 inch.
2 tbsp. olive oil
2 tbsp. butter
1/2 lb portobello mushrooms
Juice of 1 lemon
1/2 thinly sliced lemon
Flour for dredging
Salt and pepper to taste
1 tbsp. minced garlic
1 tbsp.(water packed) capers, drained
1/2 c. white wine
1 c. chicken broth
2 tbsp. minced parsley
2 tbsp. WondraRecipe
Sprinkle chicken with salt and pepper. Dredge them in flour and shake off excess. Melt butter with oil in a heavy sauce pan over med.heat Add chicken and lightly brown 1 to 2 minutes on each side. Remove to a dish.
Add garlic, mushrooms and capers. Saute 2-3 minutes. Return chicken to pan and add wine and lemon juice. Simmer for 5 or 6 minutes with cover on. Mix Wondra with chicken broth, add to pan and simmer another 5 to 6 mintues. Add lemon slices and parsley. Serve with Risotto. Serves 4
