Chicken and Vegetable Risotto

List of Ingredients
2 c. sliced mushrooms
1/2 cup chopped onions
4 cloves garlic, minced
1/4 c. fresh parsley finely chopped or 1 tbsp. dried
3 to 4 tbsp. fresh basil or finely chopped or 1 tbsp. dried
6 c. no fat low salt chicken broth
1 1/2 c. uncooked arborio rice or converted white rice
1 lb chicken. cut into 1/2 pieces, cooked.
2 c. broccoli flowerets cooked crisp and tender
4 plum tomatoes, seeded and chopped
1/2 tsp. salt
1/2 tsp. black pepper
2 tbsp. Parmesan cheeseRecipe
Spray large saucepan with cooking spray; heat over med. heat until hot. Add mushrooms, onions and garlic; cook and stir about 5-6 minutes or until tender. Add parley and basil; cook 1 minute.
Place chicken broth in med. saucepan and bring to a boil over high heat.
Add rice to mushroom mixture; cook and stir over med. heat 1-2 mins. Add chicken broth to mushroom mixture 1/2 c. at a time. stirring constantly until broth is absorbed before adding next 1.2 c. Continue adding broth and stirring until rice is tender and mixture is creamy, 20- 25 mins.
Add chicken, broccoli, tomatoes, salt and pepper. Cook and stir 2-3 minutes or until heated through. Sprinkle with cheese
