Recipe Introduction
I'm hoping I've converted everything correctly, but if it looks wrong to you maybe run it past Nina and hopefully she'll know what I mean
List of Ingredients
4 single chicken breasts, cut in half horizontally -approx 1/2lb each( 200g)
3oz (1/2 cup)plain flour (not self raising)
salt and pepper to taste
2 eggs, lightly whisked
3oz breadcrumbs
3oz parmesan cheese
Oil to grease trayRecipe
Preheat oven to 500F (240C). Brush a baking tray with oil lightly to grease. Place 1 pce chicken between 2pcs plastic wrap (cling wrap). Use the flat side of a meat mallet or rolling pin to gently pound until the chicken is about 1/4 inch thick. Repeat with remaining chicken pieces.
Place the flour in a bowl and season with salt and pepper. Stir to combine. Place the egg in a bowl and spread the breadcrumbs and parmesan (mixed together) over a plate. Using your hands, coat a chicken piece with flour and shake off any excess.
Dip the chicken into the egg and drain off any excess.
Dip chicken into the breadcrumb mix, pressing firmly to coat. Place on the prepared tray. Repeat with all chicken pieces.
Bake in preheated oven for 5 minutes. Remove from oven and turn chicken over. Return to oven and bake for a further 5 minutes or until golden brown and just cooked through. Serve immediately.
