    Serve this over rice with a side of fresh green beans and garnish with slivers of red pepper.


    List of Ingredients


    • 3-4 boneless, skinless chicken breasts, cut ito strips
    • 1 ripe, medium mango, pureed
    • 1 cup regular, low-fat, or non-fat sour cream
    • 2 Tbsp chopped fresh chives
    • 2 Tbsp dry white wine (optional)


    Instructions


    1. Saute chicken in 2 Tbsp of olive oil or with your choice of cooking spray. Cook until no longer pink, remove from pan and set aside.
    2. Pour mango puree into already warm pan. Warm until just bubbling.
    3. Add sour cream and stir until incorporated.
    4. Add wine, if desired, and stir until incorporated (add slowly so you can gauge the consistency of the sauce you like).
    5. Stir in chopped chives.
    6. Add in cooked chicken and simmer on low in sauce until chicken is coated and reheated.
    7. Server over rice.
