Pork and Pepper Skillet

8 2-oz boneless center-cut pork loin chops
1/2 tsp chopped fresh thyme
1/4 tsp freshly ground black pepper
1/8 tsp salt
Vegetable Cooking spray
1 tsp olive oil
1/2 medium onion, sliced lengthwise
3 medium sweet red peppers, seeded and sliced into thin strips
1 clove garlic, crushed
1 tbs red wine vinegar
Fresh thyme sprigs (optional)
Recipe
Rub both sides of pork with chopped thyme, ground pepper, and salt. Coat a large nonstick skillet with cooking spray. Place over medium-high heat until hot. Add pork, and cook 2-3 minutes on each side or until lightly browned. Remove pork from skillet; set aside, and keep warm.
Add oil to skillet. Place over medium-high heat until hot. Add onion and sweet red pepper; sauté 5 minutes or until crisp-tender. Add garlic and pork; cover, reduce heat, and cook 10 minutes or until vegetables are tender and pork is done. Drizzle with vinegar. Garnish with thyme sprigs, if desired.
