Stuffed Potato Crisps
If you want plain vegetables, this is not the recipe for you.
List of Ingredients
- 6 large potatoes, scrubbed clean
- 1/2 cup {1 stick} butter, melted
- Ground pepper
- Garlic powder
- 8 strips bacon, fried crisp and crumbled
- 2 cups grated cheddar cheese
Instructions
- Preheat the oven to 425.
- Bake the potatoes for 1 hour.
- Cool the potatoes and cut them into quarters lengthwise. Scrape away the potato pulp leaving a layer attached to the skin.
- Place the skins, cut-side up, on a buttered baking dish and drizzle the skins with the melted butter. Sprinkle the skins with pepper, garlic powder, bacon and cheese.
- Bake the skins for 15 minutes or until the cheese is golden brown and puffy and the skins are crisp. Serve
