Mountain Cookies

List of Ingredients
1 cup butter (no substitutes), softened
1 cup confectioner's sugar
2 tsp. vanilla extract
2 cups all-purpose flour
1/2 tsp. salt
Filling:
1 package (3 oz.) cream cheese, softened
1 cup confectioner's sugar
2 tblsp. all-purpose flour
1 tsp. vanilla extract
1/2 cup finely chopped pecans
1/2 cup flaked coconut
Topping:
1/2 cup semisweet chocolate chips
2 tblsp. butter or margarine
2 tblsp. water
1/2 cup confectioner's sugar
Recipe
In a mixing bowl, cream the butter, sugar and vanilla. Combine flour and salt; gradually add to the creamed mixture and mix well. Shape into 1 inch balls; place 2 in. apart on ungreased baking sheets. Make a deep indentation in the center of each cookie. Bake at 350 deg. for 10-12 minutes or until the edges just start to brown. Remove to wire racks to cool completely. For the filling, beat cream cheese, sugar, flour and vanilla in a mixing bowl. Add pecans and coconut; mix well. Spoon 1/2 tsp. into each cookie. For topping, heat chocolate chips, butter and water in a small saucepan until melted. Stir in sugar. Drizzle over cookies.
Yield: 4 dozen
