Sweet and Sour Shrimp

List of Ingredients
4 lb. shrimp
3 c. apple juice
1 c. white vinegar
2/3 c. sugar
1/2 c. catsup
4 tbsp. cooking oil
2 tbsp. soy sauce
1/2 tsp. salt
1 c. diagonally sliced carrots
1 c. cubed green pepper
1/2 c. sliced green onions and tops
4 tbsp. cornstarch
1/2 c. apple juice
2 c. hot cooked rice
1 c. toasted almondsRecipe
Drain shrimp. Cover shrimp with ice water and let stand for five minutes. Drain. Combine 3 cups apple juice, vinegar, sugar, catsup, oil, soy sauce and salt in saucepan; bring to boil. Add carrots and simmer for 15 minutes. Add green pepper and onion; cook five minutes longer. Dissolve cornstarch in 1/2 cup apple juice. Add gradually to heated sauce and cook until thickened, stirring constantly. Add shrimp; heat thoroughly. Toss almonds with rice. Serve shrimp sauce over rice. Makes 6 servings.
