Savannah Red Rice

List of Ingredients
3/4 cup diced onion
1/3 to 1/2 cup diced green pepper
2 tblsp. vegetable oil
1 1/2 lb. cooked ham, finely chopped
2 (8 oz.) cans tomato sauce
2 cups water
2 tblsp. sugar
1/2 tsp. salt
2 cups uncooked regular rice

Saute' onion and green pepper in oil in a Dutch oven until tender. Stir in ham; cook over medium heat about 3 minutes.
Add tomato sauce, water, sugar, and salt; stir well. Bring mixture to a boil, and add rice. Reduce heat; cover and simmer 15 minutes.
Cut a circle of brown paper large enough to fit over top of Dutch oven, and place paper over pot. Replace lid over paper; continue to simmer 15 to 20 minutes.
Yield: 8 to 10 servings
