Gourmet Potatoes

6 medium potatoes
1/4 cup melted butter or margarine
2 cups (8 oz.) shredded Cheddar cheese
1 (8 oz.) carton commercial sour cream
3 green onions, chopped
1 tsp. salt
1/4 tsp. pepper
2 tbsp. butter or margarine
Recipe
Cover potatoes with salted water and bring to a boil; reduce heat and cook about 30 minutes or until tender. Cool slightly; peel and coarsely shred potatoes; set aside.
Combine 1/4 cup melted butter and cheese in a heavy saucepan; cook over low heat, stirring constantly, until cheese is partially melted.
Combine potatoes, cheese mixture, sour cream, onion, salt and pepper; stir well. Spoon potato mixture into a greased 2-qt. casserole; dot with 2 tbsp. butter. Cover and bake at 300 degrees for 25 minutes.
Yield: 6-8 servings
