Orange orLemon Snowball Cookies

- 2/3 cup unsalted butter
- 3/4 cup sugar
- 1 egg
- 1/2 cup plus 1 tbsp. orange juice*
- 2 cups flour
- 1/4 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. salt
- 2 cups powdered sugar, sifted
- 2 egg whites
- orange colored sugar*
- lemon colored sugar*
- food coloring
Instructions
- Heat oven to 400F. Cream together butter and sugar with an electric mixer. Add egg and beat until combined. Stir in 1/2 cup orange juice.*
- Sift together flour, baking powder, baking soda and salt; add to egg mixture and mix until combined.
- Drop by rounded teaspoons of dough about 2in. apart on two parchment lined cookie sheets. Bake 8-10 minutes, or until browned on edges. Remove from oven.
- Meanwhile, combine powdered sugar, egg whites and 1 tbsp. orange juice* in the bowl, with an electric mixer beat until fluffy and shiny. Spread icing over cookies and sprinkle with orange colored sugar* Let stand until dry, about 4 hours.
- *If lemon cookies are desired, substitute 1/2 cup plus 1 tbsp. lemonade and lemon colored sugar.
- To make orange and lemon colored sugar, mix a couple of drops of orange or yellow food coloring with granulated sugar until color is reached.
