    Orange orLemon Snowball Cookies

    • 2/3 cup unsalted butter
    • 3/4 cup sugar
    • 1 egg
    • 1/2 cup plus 1 tbsp. orange juice*
    • 2 cups flour
    • 1/4 tsp. baking powder
    • 1/4 tsp. baking soda
    • 1/2 tsp. salt
    • 2 cups powdered sugar, sifted
    • 2 egg whites
    • orange colored sugar*
    • lemon colored sugar*
    • food coloring


    Instructions


    1. Heat oven to 400F. Cream together butter and sugar with an electric mixer. Add egg and beat until combined. Stir in 1/2 cup orange juice.*
    2. Sift together flour, baking powder, baking soda and salt; add to egg mixture and mix until combined.
    3. Drop by rounded teaspoons of dough about 2in. apart on two parchment lined cookie sheets. Bake 8-10 minutes, or until browned on edges. Remove from oven.
    4. Meanwhile, combine powdered sugar, egg whites and 1 tbsp. orange juice* in the bowl, with an electric mixer beat until fluffy and shiny. Spread icing over cookies and sprinkle with orange colored sugar* Let stand until dry, about 4 hours.
    5. *If lemon cookies are desired, substitute 1/2 cup plus 1 tbsp. lemonade and lemon colored sugar.
    6. To make orange and lemon colored sugar, mix a couple of drops of orange or yellow food coloring with granulated sugar until color is reached.
