    Rhubarb Upside Down Cake

    List of Ingredients




    rhubarb cut in 1/2" cubes
    3/4 c brown sugar
    1/2 c melted butter
    eggs, separated
    1 cup sugar
    5 Tbs orange or pineapple juice
    1 cup flour
    1 tsp. baking powder
    1/4 tsp salt

    Recipe



    Place in a single layer on bottom of greased 7 x 11" pan. Sprinkle brown sugar over rhubarb and pour melted butter over all. Set aside. Preheat oven to 350 degrees.

    With wire whisk, beat egg yolks until thick. Mix in sugar and juice. Stir in dry ingredients. Fold in stiffly beaten egg whites. Pour batter over rhubarb. Bake for 40-45 minutes. Top is deep golden and batter tests done with toothpick. Cool briefly.

    Run table knife around edges to loosen cake, place a sheet of waxed or freezer paper on cake pan, place inverted cookie sheet on top and turn the whole works over. Absolutely delicious served slightly warm with whipped cream or topping.
