1 MED. LEMON, UNPEELED, QUARTERED AND SEEDED
1-1/4 C SUGAR
2 TBLS LEMON JUICE
1/4 C BUTTER OR MARG. MELTED
1 UNBAKED 9" PIE CRUST (NOT DEEP DISH)Recipe
COMBINE THE FIRST 4 INGRED. IN THE CONTAINER OF AN ELECTRIC BLENDER; PROCESS 3 MIN OR UNTIL SMOOTH.
ADD MELTED BUTTER; PROCESS 30 SECONDS. POUR MIXTURE INTO PIE SHELL. BAKE AT 350 FOR 30 - 35 MIN.
MAY BE SERVED WITH VANILLA ICE CREAM OR FROZEN YOGART.
