    LOW FAT CREAMY PASTA PRIMAVERA

    List of Ingredients




    8 oz. fettuccini noodles (I used herb and garlic)
    1 cup 1% creamed cottage cheese
    1/4 cup 1% milk
    1 egg
    4 Tbs. grated parmesan cheese
    1/4 tsp. grated nutmeg
    1/4 tsp. pepper
    2 cups lightly steamed veggies (I used a combination
    of steamed little broccoli and cauliflower florets, sliced
    zucchini and carrot match sticks, as well as stir fried
    (1 tsp. oil) sliced mushrooms, onions and green peppers).
    I think I had more like four or five cups of veggies when I
    was done.

    Recipe



    Whirl all the sauce stuff in the blender until smooth and creamy. Add
    to cooked noodles with veggies, gently heat one minute, or until you
    figure the egg is cooked. Don't boil or over cook! Serves 4.

    NOTE: you can also add smoked salmon, cooked chicken, shrimp,
    scallops, mussels, crab meat, white wine, strips of green onions or
    whatever your imagination dictates.
