    Pasta Omlet

    List of Ingredients




    4 eggs
    1/4 c grated Parmesan cheese
    1 T minced fresh parsley, or 1 t dried parsley
    salt and black pepper to taste
    2 c cooked pasta
    2 c tomato sauce, warmed. optional
    2 T cooking oil

    Recipe



    Lightly beat the eggs and mix in the cheese, parsley, and a little salt and pepper. Add the cooked pasta and stir.

    Heat the oil in a large frying pan. Pour the egg and pasta mixture into the pan to make an even layer. Cook over medium heat until the bottom is lightly browned.

    Turn over the omelet by inverting it onto a plate and then sliding back into the pan. Heat on the other side until browned and a crust is formed.

    Cut into wedges and top with warmed tomato sauce.
