    CHICKEN WITH MUSHROOM SAUCE

    List of Ingredients




    8 chicken breast halves
    2 Tbsp olive or vegetable oil
    2 c sliced fresh mushrooms
    2 green onions, chopped
    1 c white wine or chicken broth
    3 Tbsp butter
    1/2 tsp salt
    1/4 tsp pepper
    1 Tbsp cornstarch
    2 Tbsp cold water

    Recipe



    In a large skillet, brown chicken in oil. Cover and cook until juices run clear, about 20 minutes. Remove chicken; keep warm. In the same skillet, saute mushrooms and onions until tender. Stir in wine or broth, butter, salt and pepper. In a small bowl, combine cornstarch and water until smooth; add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Return chicken to skillet. Heat through.
