Chicken&Potatoes in Mushroom Cream Sauce
List of Ingredients
400g tiny new potatoes, unpeeled and halved
4 sm chicken breast fillets, skin removed, each
cut into 4 pieces.
200g button mushrooms, chopped
2 tsp minced garlic
1/4 cup dry white wine
150ml evaporated light milk
2 tsp cornflour
1 tbs water
2 tbs fresh basil, chopped
Recipe
Cook potatoes - you can do this in the microwave if you like for 4 minutes on high. Coat a pan with cooking spray, heat and cook the chicken until browned both sides and cooked through. Remove from pan.
To the same pan, add the mushrooms and garlic, cook for 1 minute. Stir in the wine and milk, bring to the boil. Stir in the combines cornflour and water. Stir until mixture thickens. Stir in the basil.
As the potatoes and chicken to the pan. Coat with the sauce. Serves 4. Is 4 1/2 points on the weight watchers points plan.
