    Ginger Crusted Chicken

    List of Ingredients




    Olive oil cooking spray (I use whatever I have on hand.)
    3/4 lb boneless, skinless chicken breasts
    1/4 cup plain bread crumbs
    salt and freshly ground pepper
    1 egg white (if no eggs, you can substitute fat free milk)
    2 tsp ground ginger

    Recipe



    The secret to this recipe is baking in a VERY HOT oven. Preheat oven to 450F and line a baking sheet with foil. Spray foil with cooking spray. Remove fat from chicken. Wrap loosely in plastic wrap and pound flat to 1/2" thick with palm of hand or bottom of skillet. Mix bread crumbs with salt and pepper to taste. ( I rarely use salt in cooking, often I add a bit more ginger!) Break up egg white with a fork. Dip chicken into egg white. Sprinkle ginger on both sides of chicken breasts. Roll chicken in bread crumbs, making sure chicken is completely coated.
    Place chicken on baking sheet and bake 10 minutes or until done.
    Serve with rice and asparagus tips.
