Roast Chicken with Roasted New Potatoes
List of Ingredients
6 tbsp olive oil
1 tbsp chopped (or dried) thyme, rosemary, marjoram, oregano, or sage leaves
salt and pepper to taste
1 whole (3-4 lb) chicken, rinsed and patted dry with paper towels
1 1/2 to 2 obs red or white (small) potatoesRecipe
Preheat oven to 450 degrees.
Mix olive oil, herb, salt and pepper. Place chicken, breast side down in a roasting pan. Toss half of the herb mixture with the potatoes and scatter them in the pan. Cover then begin roasting.
After 20 minutes, spoon some of the olive oil mixture over it and the potatoes, then turn bird breast side up. Shake the pan so potatoes turn and cook evenly, or just stir them.
Shake pan again and baste bird again after 7-8 minutes. At this point the chicken should be beginning to brown (if not, roast a few more minutes). Turn heat down to 325 degrees and baste again with remaining olive oil mixture and roast til a thermometer reads 160 - 165 degrees.
Total roasting time is 50 - 70 minutes.
