    STUFFED CHICKEN BREAST

    6 boneless skinless chicken breasts, thawed
    1/2 tsp. each salt and pepper
    1 c soft bread crumbs
    1/2 c Mozzarella, shredded
    1/4 c chopped ham
    2 Tbsp olive oil
    1/2 c water

    Recipe



    Slit a pocket in meaty part of chicken. Season with salt and 1/4 tsp. pepper.
    In a small bowl, combine bread crumbs, cheese, ham, pepper. Stuff.
    Close with toothpicks.
    In a large frying pan, heat olive oil on medium-high heat. Add breasts, cook, turning once, 3-5 minutes, or until browned on both sides. Add water, boil. Reduce heat to low, cover, cook 20-30 minutes until tender and white, turn once. Remove toothpicks and serve.
