    Vegetable Fried Rice

    List of Ingredients


    • 4 C Hot cooked instant rice; cook as directed on box
    • 3 Eggs, beaten
    • 2 Tbs Green onions, sliced
    • 1-(9 oz) pkg frozen baby peas, thawed
    • 1-(4 oz) can tiny shrimp, drained, rinsed
    • 1-4.5 oz jar mushrooms, sliced
    • 3 tablespoons stir-fry sauce


    Instructions


    1. While rice is cooking, spray large skillet with nonstick cooking spray. Heat over medium heat until hot (I added a teaspoon of butter). Add eggs and onions; cook and stir about 2 minutes or until eggs are firm.

    2. Add cooked rice and all remaining ingredients; cook and stir 2 - 4 minutes or until thoroughly heated, adding the stir fry sauce or a few drops of sesame oil and soy sauce to taste.



    Final Comments


    Aunt Marsha used regular long grain rice. She also omitted the shrimp to make it all veggie. If you want to use fresh mushrooms, double it. If you don't have the stir fry sauce, you can substitute it with sesame oil to taste and low fat soy sauce to taste.
    Makes about 5 1/2 cups.
