    Cucumber Boat

    1 medium cucumber

    1/4 c cream cheese

    2 T chunky peanut butter

    If the cucumber is waxed, remove the skin with a vegetable peeler. Slice the cucumber in half lengthwise and scoop out the seeds.

    In a small mixing bowl, stir together the cream cheese and
    peanut butter. Spread this mixture into the hollowed out
    cucumber.
