Orange Kiss Me Cake

List of Ingredients
- 6 ounces frozen concentrated orange juice (remove 1/4 cup and set this aside for the topping)
- 1 cup sugar
- 1 cup raisins (floured)
- 2 eggs
- 2 cups self-rising flour
- 1/2 cup margerine
- 1/2 cup evaporated or whole milk
- 1/2 cup chopped pecans
- Ingredients for topping:
- 1/4 cup orange juice (from above)
- 1 teaspoon ground cinnamon
- 1/2 cup sugar
- 1/2 cup chopped pecans
Instructions
- Bring all ingredients to room temperature.
- Stir ingredients all together. Beat by hand for 3 to 5 minutes. (do not use a mixer)
- Pour into a 9x13 pan and bake in 350 degree oven for 35-40 minutes, or until cake springs back when gently pressed down.
- Spread the reserved orange juice concentrate over the hot cake.
- Mix cinnamon and sugar and sprinkle over the juice glazed cake.
- Top with chopped pecans.
Final Comments
If using plain flour, add 3 teaspoons of baking powder and 1/2 teaspoon salt.
Serve warm. This was one of my favorites.
