Meat Balls

List of Ingredients
- 2 1/2 pounds ground beef
- 1/4 cup chopped onion (or substitute onion powder)
- 1 1/3 cups cracker crumbs
- 3 eggs
- 1/2 cup catsup
- 2 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 cans cream of mushroom soup
- 1/2 cup cream
Instructions
- Mix all ingredients together except for cream and soup.
- Shape into small balls. (I use the small or medium sized scoop from Pampered Chef.)
- Brown meat balls in a hot skillet and place them into a casserole dish.
- Drain drippings from the skillet, leaving about 1 to 2 tablespoons.
- Add soup to the drippings in the skillet and stir.
- Add enough cream to make a gravy (I usually add more than 1/2 cup). Gravy should be of medium consistency.
- Stir until heated, then pour the gravy over the meatballs. Gravy will thicken as it bakes.
- Cover and bake in 325 degree oven for 1 1/4 hours.
Final Comments
Serves 12 to 14 and doubles nicely. If I make this for someone else, I always have to make extra for my kids. They love it!!
