    Chicken Tacos

    List of Ingredients


    • 3 to 3 1/2 pound chicken, cut up
    • 1 package corn tortillas (flat uncooked shells)
    • 1 can tomato sauce (14 - 15 ounce size)
    • 2 medium onions - diced (or use onion powder)
    • Hot Sauce (to taste)
    • Salt (to taste)
    • Pepper (to taste)
    • Cooking Oil
    • 1 package toothpicks
    • Sour Cream (for topping)


    Instructions


    1. Boil chicken until tender. Remove meat from the bones.

    2. Put 3-4 Tablespoons of cooking oil in a skillet.

    3. Braise onions in the oil and then add the chicken.

    4. Pour tomato sauce over chicken and stir well.

    5. Season to taste with salt, pepper and hot sauce.

    6. Remove from heat and set aside.

    7. In another skillet, heat 1/2" to 1" of cooking oil.

    8. Place a tortilla shell in the hot oil until it becomes soft and pliable (note, cooking too long will make it hard and brittle).

    9. Remove tortilla from oil and place on a paper towel to absorb grease.

    10. Blot both sides of the tortilla.

    11. Place some of the chicken mixture in the middle of the tortilla. Fold both sides to overlap the center and secure the fold with a toothpick.

    12. Fry filled tortilla in hot oil until crisp.

    13. Remove from oil and drain on paper towel.

    14. Repeat steps 8-13 until all the chicken mixture is gone.

    15. Serve with sour cream.



    Final Comments


    This is time consuming, but well worth the effort. My mother would place the cooked tacos on a platter, and place the sour cream in a separate dish, to be added by each person. Note: I use two skillets for cooking the tacos....one to place the unfilled shell in, and the other to cook them after they are filled.
