    Simple Oven Roasted Chickent

    List of Ingredients


    • 2 chicken breast halves, bone in and skin on
    • Salt and pepper to taste
    • 1/2 cup chicken broth
    • 1/4 white wine


    Instructions


    1. Place in the center of the oven; preheat oven to 500 degrees. No glass pans.

    2. Place chicken in a metal roasting pan and sprinkle liberally with salt and pepper. Roast, skin side up, for 10 minutes; turn and roast for another 10 minutes; turne once more and roast until skin is nice and brown, about another 5-10 minutes.

    3. Remove chicken from roasing pan and keep warm. Spoon the fat from the pan and place the pan on the stovetop over med-high heat; add broth and wine and deglaze the pan, using a wire whisk. Allow this liquid to simmer till reduced by half. Serve sauce over chicken.
