BARLEY AND CORN CASSEROLE
List of Ingredients
- 3 GARLIC CLOVES, MINCED
- 1 CUP CHOPPED ONIONS
- 2/3 CUP CHOPPED CARROTS
- 1 TABLESPOON COOKING OIL
- 3 CUPS CHICKEN BROTH
- 1 CUP REGULAR PEARL BARLEY
- 1/4 TEASPOON SALT
- 1/8 TEASPOOON PEPPER
- 2 CUPS FROZEN CORN, THAWED
- 1/2 CUP CHOPPED FRESH PARSLEY
Instructions
- IN A SKILLET OVER MEDIUM HEAT,SAUTE THE GARLIC, ONION AND CARROTS IN OIIL TIL TENDER.
- TRANSFER TO GREASED 2 QUART BAKING DISH;
- ADD BROTH, BARLEY,SALT AND PEPPER.
- MIX WELL.
- COVER AND BAKE AT 350 DEGREES ABOUT 10-15 MINUTES.
- BARLEY SHOULD BE TENDER AND CORN HEATED THROUGH
