List of Ingredients
- 6 CUPS HALF AND HALF CREAM
- 2 CUPS MILK
- 1 1/2 CUPS SUGAR
- 1/8 TEASPOON SALT
- 5 EGG S
- 5 EGG YOLKS
- 2 CUPS WHIPPING CREAM
- 1 1/2 TEASPOONS VANILLA EXTRACT
- 3 CUPS FLAKED COCONUT---FRESH IS BEST
- 2 TEASPOONS COCONUT EXTRACT
Instructions
- IN A LARGE SAUCEPAN, COMBINE THE FIRST FOUR INGREDIENTS.
- COOK OVER MEDIUM HEAT UNTIL SUGAR DISSOLVES
- REMOVE FROM HEAT.
- IN A BOWL BEAT EGGS AND EGG YOLKS.
- STIR IN 1 CUP HOT CREAM MIXTURE TO EGGS, THEN RETURN TO PAN.
- COOK AND STIR UNTIL SLIGHTLY THICKENED.
- COOL,
- REFRIGERATE OVERNIGHT.
- IN A BOWL BEAT WHIPPING CREAM AND EXTRACTS UNTIL STIFF PEAKS FORM.
- FILL ICE CREAM MAKER CYLINDER TWO THIRDS FULL.
- WORK ICE CREAM MAKER ACCORDING TO MANUFACTURES DIRECTIONS.
- REFRIGERATE ANY REMAINING MIXTURE UNTIL READY TO FREEZE.
