    COCONUT FRIED SHRIMP


    List of Ingredients


    • 1 POUND RAW SHRIMP, SHELLED AND DEVEINED
    • 1/3 CUP LEMON JUICE
    • 1/2 TSP. SALT
    • 1/3 TSP GROUND GINGER
    • CURRY POWDER TO TASTE
    • 1 3/4 CUP FLOUR, DIVIDED
    • 2 TSP. BAKING POWDER
    • 1 1/4 CUP SKIM MILK
    • 1/2 CUP CANNED CREAM OF COCONUT
    • 1 (3 1/2 oz) CAN FLAKED COCONUT
    • OIL FOR FRYING


    Instructions


    1. MARINATE SHRIMP IN LEMON JUICE, SALT, GINGER AND CURRY
    2. FOR 1 TO 2 HOUR.
    3. DRAIN WELL.
    4. PREPARE BATTER OF 1 1/2 CUPS FOULR, BAKING POWDER, MILK
    5. AND CREAM OF COCONUT.
    6. COAT SHRIMP WITH REMAINING FLOUR AND DIP INTO PREPARED
    7. BATTER, THEN IN FLAKED COCONUT.
    8. FRY IN HOT DEEP FAT 2 TO 3 MINUTES.
    9. FRY ONLY 5 TO 6 SHRIMP AT A TIME.
    10. YEILD 4 SERVINGS
