COCONUT FRIED SHRIMP

- 1 POUND RAW SHRIMP, SHELLED AND DEVEINED
- 1/3 CUP LEMON JUICE
- 1/2 TSP. SALT
- 1/3 TSP GROUND GINGER
- CURRY POWDER TO TASTE
- 1 3/4 CUP FLOUR, DIVIDED
- 2 TSP. BAKING POWDER
- 1 1/4 CUP SKIM MILK
- 1/2 CUP CANNED CREAM OF COCONUT
- 1 (3 1/2 oz) CAN FLAKED COCONUT
- OIL FOR FRYING
Instructions
- MARINATE SHRIMP IN LEMON JUICE, SALT, GINGER AND CURRY
- FOR 1 TO 2 HOUR.
- DRAIN WELL.
- PREPARE BATTER OF 1 1/2 CUPS FOULR, BAKING POWDER, MILK
- AND CREAM OF COCONUT.
- COAT SHRIMP WITH REMAINING FLOUR AND DIP INTO PREPARED
- BATTER, THEN IN FLAKED COCONUT.
- FRY IN HOT DEEP FAT 2 TO 3 MINUTES.
- FRY ONLY 5 TO 6 SHRIMP AT A TIME.
