CRISP SQUASH PICKLES
List of Ingredients
- 6 MEDIUM YELLOW CROOK NECK SQUASH, UNPEELED AND SLICED THIN
- 1 GREEN PEPPER, FINELY CHOPPED
- 1 ONION, FINELY CHOPPED
- 1 TABLESPOON SALT
- 2 TEASPOONS CELERY SALT
- 1/2 CUP FRESH LEMON JUICE
- 1 LEMON, UNPEELED, FINELY CHOPPED
Instructions
- COMBINE FIRST FIVE INGREDIENTS IN A LARGE BOWL.
- IN SEPARATE BOWL COMBINE REMAINING INGREDIENTS,
- POUR OVER FIRST BOWL OF INGREDIENTS.
- COVER AND REFRIGERATE 24 HOURS.
- THESE WILL KEEP SEVERAL WEEKS IN A REGULAR SCREW-TYPE JAR UNDER NORMAL REFRIGERATION.
