PICKLED WATERMELON RIND
THIS WAS A FAVORITE MADE BY MY GREAT-GRANDMOTHER MANY YEARS AGO. THIS IS A TRUE OLD FAVORITE FOR YOUNG TASTERS TO TRY.
List of Ingredients
- 2 1/2 QUARTS PARED WATER MELON RIND
- COLD WATER
- SALT
- 1 1/2 QUARTS VINEGAR
- 1 1/2 CUPS WATER
- 3 POUNDS SUGAR
- 6 PIECES CINNAMON STICKS
- 2 TABLESPOONS WHOLE CLOVES
Instructions
- REMOVE GREEN SKINS AND PINK FLESH FROM RINDS AND WEIGHT.
- CUT RIND IN DESIRED PIECES.
- PLACE IN A LARGE KETTLE AND COVER WITH WATER.
- ADD SALT IN THE PROPORTIONS OF 1/4 CUP SALT TO EACH 1 QUART OF WATER.
- SIMMER FOR 30 MINUTES.
- DRAIN OFF SALT WATER
- COVER WITH FRESH WATER AND COOK 10 MINUTES.
- CHANGE WATER AGAIN AND BOIL GENTLY UNTIL THE RIND IS TENDER.
- COVER AND LET STAND OVERNIGHT.
- IN THE MORNING, DRAIN OFF THE WATER.
- COMBINE VINEGAR, WATER, SPICES AND SUGAR AND STIR OVER LOW HEAT UNTIL SUGAR DISSOLVES.
- ADD THE RIND AND SIMMER 2 HOURS OR UNTIL SYRUP IS THICK AND RIND IS CLEAR.
- REMOVE THE SPICE, PACK IN HOT STERLIZED JARS AND SEAL AT ONCE.
