GOLDEN CHEESE BROCCOLI BAKE
THIS WAS JACQUIE'S FIRST LARGE CONTRIBUTION TO THE BIG FAMILY THANKSGIVING DINNER. SINCE THEN IT HAS BECOME A YEARLY TRADITION.
List of Ingredients
- 2 TABLESPOON BUTTER OR MARGARINE
- 2 TABLESPOONS FLOUR
- 1 1/2 CUPS MILK
- 1/4 TEASPOON SALT
- 1 1/2 CUPS (6 OUNCES) OF SHREDDED MIXED CASSEROLE CHEESE
- 1 (16 OUNCE) PACKAGE FROZEN CORN.
- 3/4 CUP CORN FLAKES* CRUSHED, DIVIDED
- 2 (10 OUNCE) PACKAGE OF CHOPPED BROCCOLI
- 2 TABLESPOONS BUTTER OR MARGARINE, MELTED
- **NOTE: FROSTED FLAKES OR RICE KRISPIES MAY BE USED
Instructions
- MELT 2 TABLESPOONS BUTTER IN HEAVY SAUCEPAN OVER LOW HEAT.
- ADD FLOUR,STIRRING UNTIL MIXTURE IS SMOOTH.
- COOK 1 MINUTE, STIRRING CONSTANTLY.
- GRADUALLY ADD MILK.
- COOK MIXTURE OVER MEDIUM HEAT STIRRING CONSTANTLY UNTIL MIXTURE IS THICKENED AND BUBBLY.
- STIR IN SALT, ADD CHEESE,
- COOK, STIRRING CONSTANTLY UNTIL CHEESE MELTS.
- REMOVE FROM HEAT, ADD 1/4 CUP CORN FLAKE CRUMBS*
- SET MIXTURE ASIDE.
- COOK BROCCOLI AND CORN ACCORDING TO PACKAGE DIRECTIONS.
- COMBINE VEGETABLES IN LIGHTLY BUTTERED 11X7X2 INCH BAKING DISH.
- POUR RESERVED CHEESE SAUCE OVER BROCCOLI.
- COMBINE REMAINING 1/2 CUP CORN FLAKE CRUMBS* AND 2 TABLESPOONS BUTTER IN A SMALL BOWL.
- STIR WELL.
- SPRINKLE CORN FLAKE CRUMB* MIXTURE EVENLY OVER BROCCOLI MIXTURE.
- BAKE UNCOVERED AT 350 DEGREES FOR 25 TO 30 MINUTES.
Final Comments
SERVES 8 EASY TO DOUBLE AND TAKE TO POT LUCK DINNERS. CHEDDAR CHEESE MAY ALSO BE USED.
