    Makes 1 loaf

    List of Ingredients




    1 ½ cup All Purpose Flour
    2 teaspoons Baking Powder
    ½ teaspoon Salt
    ½ cup Sugar
    1 Egg, lightly beaten
    1 teaspoon Vanilla
    ½ cup Coconut Milk
    ½ cup Grated Coconut

    Recipe



    Combine flour, baking powder, salt and sugar.
    Separately add the egg and vanilla, mix it in to the dry ingredients.
    Add the milk and coconut and mix until well combined.
    Put in a small greased loaf pan.
    Bake for 1 hour at 350 Fahrenheit until the bread is springy to the touch.
    Remove from the oven and let cool in the pan for 5 minutes.
    Turn the bread out onto a wire rack to cool before slicing.
