    List of Ingredients




    2 large eggs
    1 cup (7 oz) sugar
    1/3 cup (2 3/8 oz) vegetable oil
    1 cup mashed bananas (2-3 bananas, 7-9 oz)
    2 teaspoons vanilla extract
    1 teaspoon baking soda
    1 teaspoon baking powder
    1 teaspoon salt
    1 teaspoon cinnamon
    1/2 teaspoon nutmet
    2 2/3 cups (11 3/8 oz) AP flour
    1 cup (8 oz) yogurt, buttermilk or sour cream
    1 cup (4 oz) chopped nuts

    Preheat the oven to 350; grease/flour a 9x5" loaf pan

    Beat eggs, sugar and oil. Blend in bananas and vanilla. Whisk together THOROUGHLY the dry ingredients. Make sure to blend well. Add all at once to banana mimxture. Mix qickly but thoroughly then add yogurt and nuts, mixing JUST until combined. (use a light touch when mixing, as with all quick breads).

    Pour into preprared pan. Bake for about an hour until done. If bread is browning to quickly, tent with aluminum foil after 40 minutes
