Recipe Introduction
Bonnie made these for a big department meeting - HIT! She substituted dried cranberries for the currants, and added a big handful of white chocolate chips. DELISH!
List of Ingredients
3 cups flour
¾ cup sugar
½ tsp. baking powder
1 tsp. baking soda
2 tsp. grated orange peel (optional – I use 1 tsp. dried)
½ cup butter or margarine (I use butter)
¾ cup currants (I use raisins, craisins or a combination of both)
1 cup buttermilk* (The ‘real’ thing is better than souring your own milk, but it will work also.)
Recipe
Combine flour, sugar, baking powder, and baking soda. Work in butter till fine crumbs. Add buttermilk and currants. Mix well. Dough will be thick. Drop spoonfuls on greased cookie sheets. Bake at 375 for approximately 12 minutes. Enjoy!
* Can use any milk you have and add a little bit of lemon juice to curdle it a bit.
