    Recipe Introduction

    I was introduced to hokey pokey on first trip to New Zealand by my friend, Marian. Absolutely delicious! The type of golden syrup they use in NZ is called Chelsea which is difficult to find in the US (maybe online?) Lyle's is an acceptable substitute.

    List of Ingredients

    4 tablespoons sugar
    2 tablespoons golden syrup
    1 teaspoon baking soda

    Recipe

    Bring sugar and syrup to the boil, stirring all the time. Boil for 7 minutes stirring occasionally (don't burn it). Remove from heat and add soda. Stir it in quickly and thoroughly until it frots then pour immediately into a greased tin. Allow to set then break into pieces.
