    My BFF Raenette and I lived together in a house on C Street in McKinley Park in Sacramento from the late '80s to the early '90s. This recipe was created during that time. Raenette LOVED this casserole.

    List of Ingredients




    Cooking oil
    1 medium onion, chopped
    3 cloves garlic, chopped
    2 cups or so cooked black beans
    1 can diced tomatoes
    chili powder to taste
    cilantro
    tortillas
    queso of choice to top (queso fresco, cheddar, mozz, jack, etc)

    Recipe



    Heat oven to 350F.
    Saute onion in cooking oil for a few minutes. Add garlic, saute for 2 minutes. Add black beans, tomatoes (may need more to achieve desired consistency). Add chili powder. Cook. Add cilantro.

    In oiled baking pan (I use a 9x13x2), layer a bit of the sauce. Layer tortillas. Top with sauce, then cheese; repeat.

    Bake for 30 minutes.

    Serves many.
