Recipe Introduction
This recipe may actually be that of Marian's mum. ANZAC is an acronym for Australian and New Zealand Army Corps, an army corps of Australian and New Zealand troops who fought against the Turks in 1915 at the Battle of Gallipoli during World War I. The Australian and New Zealand Army Corps was disbanded in 1916 and other ANZAC formations were then formed and fought during that war in the Middle East and on the Western Front. ANZAC day is observed annually in memory of those soldiers who died in war. It is commemorated each year by both countries on April 25, the date of the first landing at Gallipoli in 1915 on a beach known as ANZAC Cove.
List of Ingredients
1/4 pound butter
1 tablespoon golden syrup (Chelsea or Lyle's, NOT Karo)
1 teaspoon baking powder dissoved in 2 tablespoons boiling water
3/4 cup flour
1 cup sugar
1 cup dessicated coconut
1 cup rolled oats
Recipe
Melt the butter and golden syrup, and baking powder/water mixture together in a saucepan. While it is melting, put the flour, sugar, coconut and rolled oats in a bowl and mix them up. Add the flour etc to the melted stuff in the pot and mix. Put spoonfuls on a greased oven try and flatten with a fork dipped in cold water.
Bake 10-15 minutes at 350F. This makes two trays full. They keep well in an airtight tin.
