    Butter Cookies for Uncle George

    An OLD Pillsbury booklet (not the bake-off type)

    Recipe Introduction

    I made these for the first time at my Uncle George/Aunt Jo's house in Alameda. They always remind me of him. RIP, Uncle George, love you always

    List of Ingredients

    1 cup butter (no substitute)
    1 cup sugar
    1 egg
    1/4 teaspoon salt
    2 teaspoons best quality vanilla extract
    2 2/3 cups all purpose flour

    Recipe

    Cream butter and sugar well. Add egg, salt and vanilla, beat well. Gradually add flour.

    Crop by teaspoonfuls onto greased baking sheet (or Silpat - 2010 note). Flatten slightly with glass which has been greased and dipped in sugar.

    Bake at 375 for 7-10 minutes.

    These can be made into refrigerator cookies. Add your "add ins" (coconut, choc chips, whatever). Roll into log. Refrigerate or freeze. Slice into 1/8 inch slices and bake as above.

    Coconut cookies are good with 1/4 cup coconut in the dough, and then roll the log in additional coconut OR finely chopped nuts.
