    Cream Wafers (Diane Butler)


    List of Ingredients


    • 1 cup softened butter
    • 1/3 cup thick cream
    • 2 cups sifted flour
    • Filling:
    • 1/4 cup softened butter
    • 3/4 cup sifted powdered sugar
    • 1 egg yolk
    • 1 teaspoon vanilla


    Instructions


    1. Heat oven to 375F.
    2. Mix cookie ingredients well.
    3. Roll out 1/8" thick on floured board. Cut with 1 1/2 " round cookie cutters.
      (Roll only 1/3 of dought at a time - keep remainder refrigerated).
    4. Transfer rounds to piece of wax paper covered with granulated sugar. Place on ungreased baking sheet. Prick with fork about 4 times.
    5. Bake 7-9 minutes. Remove from pan while hot.
    6. Cool and place 2 cookies together with filling.

    Another of Diane's wonderful Christmas cookie recipes. I've had this one for over 20 years!
