Cream Wafers (Diane Butler)
List of Ingredients
- 1 cup softened butter
- 1/3 cup thick cream
- 2 cups sifted flour
- Filling:
- 1/4 cup softened butter
- 3/4 cup sifted powdered sugar
- 1 egg yolk
- 1 teaspoon vanilla
Instructions
- Heat oven to 375F.
- Mix cookie ingredients well.
- Roll out 1/8" thick on floured board. Cut with 1 1/2 " round cookie cutters.
(Roll only 1/3 of dought at a time - keep remainder refrigerated).
- Transfer rounds to piece of wax paper covered with granulated sugar. Place on ungreased baking sheet. Prick with fork about 4 times.
- Bake 7-9 minutes. Remove from pan while hot.
- Cool and place 2 cookies together with filling.
