    Source of Recipe

    King Arthur

    Recipe Introduction

Made for david 4/13/2014 - he said they are the Best!

    List of Ingredients

2.25 (9.5 oz) all purpose flour
    1 teaspoon baking soda
    3/4 teaspoon salt
    1.5 teaspoons cinnamon
    1/2 teaspoon nutmeg
    1/2 cup (3.25 oz) shoreing
4 tablespoons (1/2 stick, 2 oz) butter softened
2 tablespoos 7/8 oz) vegetable oil
2.25 cups (18 oz) brown sugar
    2 large eggs
1/2 cup (4 oz) yogurt, plain or vanila, low fat or nonfat
(I used whole milk, Greek yogurt)
    2 teaspoons vanilla extract
3 cups (10.5 oz) rolled oats
1.5 cups (9 oz) raisins (I used cranberries)

    Recipe

    Preheat oven to 350

    Sift together dry ingredients.

In mixer bowl, cream shortening, butter, oil and brown sugar. add eggs, one at a time, beating well after each addition. Beat in the yogurt and vanilla.

Stir in oats and raisins, then add the flour mixture, in 3 additions, beating well after each addition.

Drop the batter from a tablespoon-size cookie scoop (or from tablespoon) onto parchment lined baking sheets. bake the cookies for 14 minutes. they'll still be light ta; don't let them brow or they'l be crisp instead of chewy. Let them cool on the parchment until lukewarm, then carefuly tranfer them to a wire rack; they'll be delicate when warm, then chewy as they cool. store the cookies in a tightly clossed container or plastic bag.
