    Maple Pecan Shortbread Cookies

    Recipe Introduction

    Those cookies are a never fail to please, the most demanded item of all my baking. They are very light, hence the shortbread name.

    List of Ingredients

    2 sticks butter, softened
    1/2 cup granulated sugar
    1 egg yolk
    3 Tbsp. pure maple syrup
    1/2 tsp. vanilla extract
    2 cups all-purpose flour
    1-1/4 cups chopped pecans
    (Powdered sugar for rolling)


    Recipe

    Beat butter until pale and creamy. Gradually beat in sugar. Add syrup. egg yolk and vanilla; mis until well blended. Mix in the flour and pecans.

    Shape into (skinny) logs, wrap and refrigerate the dough for one hour. Cut into logs and set no more than an inch apart on parchment-lined sheets to bake at 350 for (about) 23 minutes until just a light golden around edges. Roll slightly warm logs in powdered sugar.
