    Fudge Cake (Michael G.'s)

    List of Ingredients

    12 oz Semi-sweet chocolate
    1/3 c. Espresso

    1 c butter
    1 2/3 c sugar

    6 eggs - yolks separated
    1 c flour


    Frosting

    4T butter
    1c sugar
    1/3c milk
    2c semi-sweet chocolate

    Recipe

    Cake:

    1. Melt the chocolate together with the espresso in a double boiler, set aside.
    2. Cream the butter, and sugar - beating well. Add the eggs slowly. Beat well. Add the flour slowly.
    3. Slowly add the chocolate mixture to the batter mixture.
    4. Beat egg whites, add 1 c. sugar and beat until stiff peaks form.
    5. Fold whites into chocolate mixture.
    6. Pour into 9" springform pans.
    7. Bake at 350° for approx 50 mins or until cake tester comes out just clean.
    8. Lightly press down on tops of cakes while still hot. Cool ½ hour and then remove sides of pans.

    Frosting:

    1. bring to full boil, whisking
    2. Add chocolate, whisking.
    3. Add some coffee for smoothness.
    4. Drip, drizzle and slosh over cakes.
