    Ukrainian Poppyseed Cake

    List of Ingredients

    3/4 cup poppyseeds
    1 cup milk
    1/2 pound (2 sticks) butter
    1 1/3 cups light brown sugar
    3 eggs
    2 cups unbleached white flour
    3 teaspoons baking powder
    1/2 teaspoon salt
    1/2 teaspoon vanilla
    1 teaspoon lemon rind

    Recipe

    Preheat oven to 350F
    Butter 2 medium loaf pans

    1) Heat poppyseeds and milk together in a saucepan. Remove from heat right before it boils. Let stand until room temperature.

    2) Cream butter with sugar. Add eggs, one at a time, beating *well* after each.

    3) Sift dry ingredients together. Add alternately with poppyseed mixture, stirring well after each addition. Stir in vanilla and lemon rind at the end.

    4) Bake in well-greased loaf pans at 350F for 40-50 minutes, or until cake-tester comes out clean.
