Friends Diane and Eddie brought this for an impromptu pool party at Elle & Rick's. WOW! This dish is so simple and yet soooooo spectacular. Smoked Spanish paprika was used in the spice blend, and I'm convinced that grilling over coals made a big difference. I have only a gas grill but will make this dish often regardless of the cooking method available.

1 T sugar
1 T paprika
1/2 t. salt
1/2 t. garlic powder
1/2 t. ground red pepper
1/4 t. ground thyme
1/8 t. ground allspice
2 T olive oil
1 1/2 lbs peeled and deveined large shrimp

1. Prepare grill to medium to high heat.
2. Combine first 7 ingredients (dry ingredients). Combine oil and shrimp in a large bowl. Toss well to coat. Sprinkle spice mixture over shrimp. Toss to coat. Thread shrimp evenly onto 8 (8 inch) skewers. Place skewers on a grill rack coated with cooking spray. Grill 6 minutes until done, turning once.
