1 tablespoon olive oil
2 onions, minced
2 cloves, whole
1 cinnamon stick
1-4 garlic cloves, finely chopped
4-5 thin slices ginger root
3 tomatoes, quartered
2 green chilies, finely chopped
8 oz. tomato sauce
1 1/2 teaspoons cumin
1 teaspoons coriander
1 teaspoon black pepper
1 teaspoon curry powder
1/2 teaspoon garlic powder
1/2 teaspoon ginger powder
pinch of turmeric
6-8 chicken breast halves, skinned
4 tablespoons plain yogurt
1/2 lime
Recipe
Place olive oil in large pot over medium heat. When heated, saute onions, cloves, cinnamon, minced garlic and ginger root. When onion is opaque, add tomatoes, chilies and tomato sauce. The mixture will become soupy as tomatoes release their water, but do not add more tomato sauce.
When mixture is soupy, stir in spices. After it bubbles a few minutes add chicken pieces and stir until coated. Reduce heat and cover. After ten minutes, add yogurt. After another ten minutes, squeeze in lime -- but only once, and lightly, as too much will rob the flavor. Start preparing the rice while this mixture cooks for 20-30 minutes, or until chicken is done.
If too spicy, eliminate the chili peppers and cut the spices in half. Also, drinking milk or water with the meal will take the edge off the spices. If not spicy enough, increase curry powder and add red pepper. The yogurt can be a side dish. Serve the chicken over rice and with pita bread. Serves 8.
Note: This recipe was given to President Barack Obama and Phil Boerner by their Pakistani friends in 1981 in New York City. President Obama often made it when they had friends visiting from Occidental College in Los Angeles. Boerner has modified the recipe since then and he uses non-fat yogurt.
