    List of Ingredients




    2 cups almond flour
    2 tsp baking soda
    1/2 tsp salt
    1 TBSP cinnamon
    1/2 cup unsweetened shredded coconut
    3 large eggs
    3 bananas, mashed
    1/2 cup unsalted butter, cubed and softened
    2 TBSP raw honey
    1 tsp apple cider vinegar
    1/4 cups pitted and chopped dates
    2 medium carrots, shredded
    3/4 cup chopped walnuts

    Recipe



    Oven to 325F. Lightly oil 12-cup muffin pan or line with liners.

    In large bowl, mix drys and coconut. In another bowl, whisk eggs, bananas, butter,honey, and vinegar. Stir wet ingredients into drys. Fold in dates, carrots, walnuts. Divide batter among muffin cups.

    Bake for 40 mins until golden brown or toothpick test. Muffins will not rise significantly due to lack of flour. Cool in pan 5 mins, then turn out.
