3 cups sifted flour (weighs 16.50 oz)
1 1/2 teaspoon salt
1 cup plus 2 tablsp vegetable shortening or 1 cup lard (1 cup shortening weighs 6.75 oz)
6 tablespoons or more of chilled water
Recipe
Combine flour and salt. Cut in shortening or lard until mixture is the consistency of coarse cornmeal.
Sprinkle cold water, 1 tablespoon at a time, tossing mixture lightly and stirring with fork. Add water each time to the driest part of mixture. The dough should be just moist enough to hold together when pressed gently with a fork.
